Instructions
- Separate lamb into lean meat and fat. Peel eggplants in stripes and cut thickly; prepare tomatoes and green chilies. On a long iron skewer, alternately thread eggplant, lamb, fat, tomato, and green chilies. Burn wood at the bottom of a 'tandır' (cylindrical clay oven). Hang the skewers vertically inside, close the lid, and slow-roast with wood smoke. The melting fat coats the vegetables, roasting them plumply.
