Instructions
- Peel eggplants in stripes and deep-fry whole until soft. In another pan, sauté chopped onions, garlic, green chilies, and minced meat. Add tomato paste, diced tomatoes, salt, pepper, and parsley, cooking until liquid evaporates to make the filling. Slit the fried eggplants lengthwise and press open to form a boat. Stuff this 'split belly' generously with the meat filling. Arrange in a baking dish and simmer/bake in tomato sauce.
