Instructions
- Peel eggplants in stripes and cut into thick rounds. Soak in salted water, then pan-fry until lightly browned. Sauté chopped onions and green chilies, add minced meat. When meat browns, add tomato paste, salt, pepper, and dried mint. Arrange the fried eggplant rounds flat at the bottom of a shallow pot, and spread the meat mixture evenly over them. Pour a little water, cover, and simmer on low until eggplants absorb meat juices and become soft.
