Instructions
- Slice leeks diagonally and carrots into rounds. Heat olive oil in a pot, sauté carrots briefly, then add leeks to coat in oil. Sprinkle raw rice into the pot, add salt, sugar, lemon juice, and water. Use a drop-lid and simmer on low until leeks are soft and liquid reduces. Serve completely cold.
