Instructions
- Boil beef or lamb tripe thoroughly to remove odor, then chop finely. Heat butter in a pot, sauté flour, and gradually add the tripe broth to make a smooth base. Return the chopped tripe to the pot and simmer. In a bowl, mix egg yolk, plain yogurt, and lemon juice (called terbiye). Temper this with a ladle of hot soup, then slowly stir it back into the pot to thicken. Serve topped with a garlic-vinegar mixture and a hot butter-paprika drizzle.
