  • Rice
  • Egg yolk
  • Butter
  • Dried mint
  • Flour

Instructions

  1. Boil water and washed raw rice in a pot until the rice is soft. In a bowl, whisk plenty of plain yogurt, egg yolk, and a little flour until smooth. Temper this mixture with a ladle of hot soup from the pot to prevent curdling. Slowly stir it back into the pot and heat gently on low until thickened (do not boil). In a small pan, melt butter, add dried mint to release the aroma, and sizzle this mint butter over the surface of the soup to finish.
