Instructions

  1. Make a simple dough with flour, water, and salt, rolling it out paper-thin with a rolling pin (oklava). Spread raw chopped spinach and crumbled feta (white) cheese, or mashed potatoes with paprika, over half the dough. Fold in half into a semi-circle (or square) and seal the edges. Place on a hot convex iron griddle (sac) and bake dry without oil. Once beautiful brown spots ('göz' meaning eyes) appear, flip it, and generously brush with butter right after baking.
