  • Pine nuts
  • Dill
  • Cinnamon

Instructions

  1. Cook a firm special pilaf by sautéing pine nuts, currants, onions, and rice, seasoned with dill, cinnamon, and allspice. Remove heads and bones of fresh anchovies (hamsi) and butterfly them. Line a buttered round baking bowl completely with the anchovies, skin side down, in a radial pattern. Pack the cooked pilaf tightly inside, and completely cover the top with remaining anchovies. Bake in the oven until the anchovies are crispy, then invert onto a plate to serve.
