Instructions
- Dice eggplants, zucchini, potatoes, and green chilies (or bell peppers) to the same size. Deep-fry each vegetable separately in generous oil until browned, and drain well on paper towels. In another pan, heat olive oil and grated garlic, then add peeled, finely chopped ripe tomatoes. Add salt, a pinch of sugar, and black pepper, cooking until it reduces to a sauce. Pour this tomato sauce generously over the fried vegetables (or toss them), and chill in the fridge to let the flavors meld.
