Instructions
- Grate zucchini coarsely, sprinkle with salt, let sit, then squeeze out the water firmly by hand (this is crucial). In a bowl, mix the squeezed zucchini, eggs, flour, crumbled feta cheese, massive amounts of chopped dill and parsley, green onions, and black pepper to make a slightly thick batter. Heat generous olive oil (or sunflower oil) in a pan, drop spoonfuls of batter, and flatten into circles. Pan-fry until both sides are beautifully golden and crispy on the outside. Serve with plain yogurt.
