  • Pul biber(chili flakes)
  • Lavaş bread
  • Onion

Instructions

  1. Finely chop beef (or chicken) almost to minced size, and boil beforehand until tender. Heat plenty of 'cottonseed oil' in a special concave griddle (tantuni sac) and add the boiled meat. Add pul biber (chili flakes), sumac, salt, and a splash of water, sautéing vigorously over high heat to create a meat juice and spice sauce. Press thin bread (lavaş) onto the griddle to absorb this red juice. Place meat, chopped onions, tomatoes, and parsley on the bread, squeeze lemon, and roll tightly.
