Instructions
- Burn off hair from sheep head and trotters with a torch and wash thoroughly. Boil in a large pot for hours (sometimes overnight) until meat falls off the bone. Chop the cooked head meat, tongue, and brain finely and return to the pot. The soup becomes cloudy and thick with rich collagen. Add a mixture of egg yolk, yogurt, and lemon juice (terbiye) to stabilize the thickness. Serve with garlic-vinegar sauce and chili butter to taste.
