- Soak lamb sweetbreads (uykuluk) in cold water to remove blood, and carefully peel off the thin membrane.
- Cut into bite-sized pieces and marinate with olive oil, salt, black pepper, and plenty of thyme to eliminate odor.
- Grill rapidly on a hot iron plate or over charcoal until the outside is crispy and the inside is meltingly soft, then serve in bread.
