- Add coarse cornmeal (corn grits) and sauté, stirring with a wooden spoon until golden and fragrant.
- Gradually add hot water (or milk) to thicken, and finally toss in massive amounts of torn Trabzon cheese (a highly stretchy unaged local cheese). Cook on low without stirring until the cheese is meltingly gooey and oil floats to the top.
