  2. Prepare 'Ekmek Kadayıfı', a giant circular sponge-like dried bread, and pour hot water over it to soften slightly.
  3. Caramelize sugar in a large wide pot, add water, and dissolve to make an amber syrup.
  4. Place the softened bread in the caramel syrup pot and simmer on low. Once the bread absorbs the syrup to its absolute limit, swelling to more than twice its thickness and becoming glossy, remove from heat and cool. Slice horizontally before serving and sandwich with massive kaymak (clotted cream).
