  • Sugar

Instructions

  2. Put water (
  3. cup), ultra-fine coffee grounds (
  4. tbsp), and sugar to taste in a long-handled small copper pot called a 'cezve' (mix well before heating).
  5. Place cezve on low heat (or traditional hot sand). When it boils and a fine foam rises, quickly remove from heat just before it overflows.
  6. Scoop only the 'foam (köpük)' into a cup. Reheat the cezve. When it foams a second time, remove from heat and pour slowly into the cup, grounds and all.
