  • Sago(tiny tapioca pearls)
  • Coconut milk
  • Evaporated milk
  • Syrup

Instructions

  2. (Sago Prep) Do not use the giant black boba popular in Japan. Boil 'Sago' (Xi Mi)—tiny, white tapioca pearls—until transparent, and shock in cold water.
  3. (Base) Blend half the ripe mango flesh with coconut milk, evaporated milk, and simple syrup into a thick, rich mango milk.
  4. (Pomelo Prep) The crucial flavor tightener: peel a grapefruit (authentically a Pomelo) and separate the flesh into individual, loose juice vesicles.
  5. In the bottom of a glass (or bowl), place diced mango and the boiled sago.
  6. Pour the blended mango-coconut milk over it.
  7. Top with the separated grapefruit vesicles.
