- Boil chickpeas soaked overnight until soft enough to crush with fingers. Simmer a whole chicken (or breast) in another pot for broth, and shred the meat finely by hand.
- Heat plenty of butter in a pot, sauté washed rice until translucent. Add boiled chickpeas, pour chicken broth and salt, cover, and simmer on low until liquid is absorbed.
- Rest off heat, mound the pilaf on a plate, and top generously with shredded chicken. Sprinkle black pepper to taste.
