- Place a whole chicken (or bone-in cuts) in a large pot with onions, carrots, and peppercorns. Simmer for hours, skimming scum, to get a clear golden broth. Remove chicken and shred.
- Heat the strained broth in a pot, add broken fine pasta (tel şehriye) and shredded chicken, and simmer.
- Mix egg yolk, lemon juice, and a little water in a bowl to make a 'terbiye' (thickener). Temper with hot soup, stir back into the pot, and warm until thickened.
