  2. Boil pre-soaked dried chickpeas until easily crushed by fingers, and carefully remove the thin skins (the secret to smoothness).
  3. Put the boiled chickpeas, generous tahini, grated garlic, fresh lemon juice, salt, cumin, and cold water (or ice water) into a food processor.
  4. Blend for several minutes, gradually adding ice water, until it becomes a fluffy, smooth cream like mayonnaise. Plate flat, make a well in the center, pour plenty of olive oil, and sprinkle with paprika and cumin.
