  • Soy sauce
  • Sugar
  • Potato starch

Instructions

  2. (Xian Yu Prep) Debone and finely mince 'Xian Yu' (Cantonese salted, fermented, dried fish. It possesses an intense umami and odor similar to anchovies or Kusaya).
  3. (Pork Prep) Do not use a meat grinder. Hand-chop pork belly with a cleaver until sticky.
  4. Knead the pork with soy, sugar, white pepper, sesame oil, starch, and 'half of the minced Xian Yu'. Press it flat like a large hamburger patty into a deep dish.
  5. Scatter the remaining Xian Yu and julienned ginger over the top (ginger transforms the fish's pungent funk into a refreshing aroma).
  6. Steam on high for
