- Scatter fillings like minced pork, shrimp, egg, and scallions thinly over the batter.
- Place in a high-heat steamer and steam violently for just 1-
- minutes.
- Remove when the batter turns translucent white and large bubbles puff up.
- Using a flat metal scraper, scrape and roll the delicate sheet forward into a wrinkled cylinder.
- Plate and drown generously in a 'special sweet soy sauce' reduced with rock sugar, scallion oil, and fish sauce.
