  • You Tiao(Fried dough stick)
  • Green scallion
  • Sweet bean sauce
  • Chili sauce

  3. Lay a few whole green scallions directly on the crepe, and top with half a 'You Tiao' (Chinese fried dough stick).
  4. Roll the crepe tightly around the scallions and dough stick into a cylinder.
  5. (The Smash Technique) Place it on an oiled griddle. Using a heavy iron press (or spatula), apply your entire body weight to violently 'SMASH' it down.
  6. Grill until the round dough stick is flattened completely, the scallion moisture steams out, and both sides are rock-crispy.
  7. Brush the exterior heavily with sweet bean sauce (Tianmianjiang) and chili sauce.
