- Chop fresh chives into 4cm lengths.
- Beat eggs with salt and a splash of water/wine.
- Heat wok oil until smoking, pour in eggs. Once they puff up, remove while still soft-scrambled (same process as Tomato Egg).
- Add a little oil to the wok, dump in the massive pile of chives, and toss on max heat for just a few seconds (overcooking releases water, making it soggy and killing the aroma).
- Season with salt and a pinch of MSG.
- Return the soft eggs, using the spatula to break them up and fold them evenly into the chives with just a few quick tosses.
