Recipe

Ingredients

  • Skewered ingredients(Chicken/Veg/Offal)
  • Chicken broth
  • Homemade chili oil
  • Green Sichuan pepper oil
  • White sesame(massive)
  • Soy sauce

Instructions

  1. [Authentic Recipe & Trends]
  2. (Ingredients) Skewer bite-sized chicken, skin, gizzards, lotus root, wood ears, broccoli, quail eggs.
  3. 'Boil everything completely' in water to cook, then let cool. (*Unlike Hot Pot where diners cook raw food, here the shop pre-cooks everything).
  4. (The Broth) The soul of the dish. Cool a 'premium chicken broth', season with soy, salt, sugar, MSG.
  5. Pour in massive amounts of 'Premium Homemade Chili Oil (Hong You)' infused with spices, and tongue-numbing 'Teng Jiao You (Green Sichuan pepper oil)' until the surface is entirely red.
  6. Shower the surface with roasted white sesame until completely covered.
  7. Fill a large clay pot (Bo Bo) with this cold broth, plunge the bundles of skewers directly into it, wait a few minutes for flavors to soak, and eat.

Trivia

[Trivia] 'Bo Bo' refers to the clay pot holding the broth. Lacking the heavy, sweating heat of traditional Hot Pot, it is massively popular among youth as a 'walkable Hot Pot' that can be eaten coolly even on blistering summer days.

Eating tips & etiquette

[Unique Eating] Diners casually pull their favorite skewers from the communal pot. Because the broth is cold (room temp), the chili oil aroma and chicken umami are felt with absolute clarity. The meat never overcooks, and veggies remain fiercely crunchy. Pay by counting the empty sticks at the end.
