  • Hand-pulled udon(La Tiao Zi)
  • Mutton(or beef)
  • Ripe tomatoes
  • Onion
  • Bell peppers
  • Cumin powder
  • Black vinegar

Instructions

  1. [Authentic Recipe]
  2. (Dough) Knead flour with salt water into a very stiff dough. Coat with oil and rest.
  3. [Pro Hand-pulling]: Upon order, cut the dough into strips and pull it through the air with both hands, stretching it into a long, single udon-thick noodle (La Tiao Zi). Boil, then shock in cold water for extreme chew.
  4. (Stir-fry) Heat oil, fry sliced mutton (or beef).
  5. Add onions, bell peppers, celery, and massive 'ripe tomatoes'. Fry until the tomatoes break down and release their tart red juices.
  6. Season with soy, black vinegar, salt, cumin powder, and Sichuan pepper into a slightly saucy stew.
  7. Pour the piping hot sauce directly over the noodles.
