- Blanch the offal and julienne finely.
- Boil sheep bones aggressively on high heat in a giant pot to extract a milky-white 'Mutton Bone Broth'.
- Add all the julienned offal into the broth with scallion, ginger, white pepper, and a touch of Sichuan pepper. Simmer on low until the offal is meltingly tender.
- (Finish) Place boiled glass noodles in a bowl, pour the boiling offal soup over it.
