Description

Loved alongside Lanzhou ramen in the Northwest. Instead of hand-pulling (La Mian), dough is placed inside a massive 'perforated metal cylinder (He Le Chuang Zi)'. Using a giant lever and body weight, the thick, round noodles are 'extruded' directly into a boiling pot. The ancestor of the pasta machine.
