- (Tripe Prep) Vigorously wash beef honeycomb tripe (Mao Du) with flour and vinegar. Pre-boil with scallion, ginger, and wine for hours until tender. Julienne it.
- Chop potatoes into large chunks and roughly chop bell peppers.
- Heat generous oil and rock sugar in a wok. Fry the tripe.
- Add massive dried red chilies, Sichuan pepper, star anise, cinnamon, garlic, and ginger. Dump in heavy 'Pixian Doubanjiang' to bloom a fiery red oil.
- Pour in water, add potatoes, cover, and braise on low for
- mins until the potatoes are fluffy and the broth turns into a thick gravy.
- Add bell peppers briefly, then dump the massive stew onto a basin-sized flat plate.
- Finish by tossing extra-wide flat noodles (Pi Dai Mian) into the remaining gravy.
