Recipe

Ingredients

  • Sheep trotters
  • White pepper(massive)
  • Dried red chilies
  • Sichuan pepper
  • Star anise
  • Black cardamom
  • Soy sauce

Instructions

  1. [Authentic Recipe]
  2. (Astonishing Hair Removal) Burn all hair off the sheep trotters completely using a gas torch. Wash in hot water while meticulously scraping off the char with a knife. Use pliers to rip off the hooves (this prep is life).
  3. (Blanch) Pre-boil with scallion, ginger, and wine to purge blood and odor.
  4. (Hu La Broth) In a giant pot, drop massive 'white pepper (Hu)', dried red chilies (La), Sichuan pepper, star anise, cinnamon, and black cardamom.
  5. Add soy, salt, and rock sugar, brewing a violently spicy, pitch-black liquid.
  6. Drop in the trotters. Simmer on low for 2-
  7. hours until the skin and tendons (gelatin) are on the verge of melting off the bone.
  8. Turn off the heat and let them cool in the broth, forcing the extreme spice to penetrate deep into the collagen core.

Trivia

[Trivia] 'Hu' means pepper, 'La' means chili. While pig trotters are eaten everywhere in China, in Muslim cities, 'Sheep Trotters' are the Halal substitute and the supreme collagen source. A demonic street food that forces infinite beer consumption.

Eating tips & etiquette

[Unique Eating] Wear plastic gloves, hold the bone, and gnaw directly. There is almost zero lean meat; you are eating purely 'the gelatin of skin and tendons'. When finished, the collagen is so profoundly rich that 'your upper and lower lips stick together like superglue'.

Allergen

Mutton, Soybeans, Wheat (Soy sauce)
