Description
The supreme banquet dish of the Kazakh nomads living in the Xinjiang grasslands. Massive blocks of horse meat (or mutton) are boiled in salt and sliced thinly. 'Hand-pulled flat pasta (Mian Pian)' is boiled in the premium meat broth. The meat is piled high over the pasta, garnished with raw onions. Simple and magnificent.

- (Meat Boiling) Prepare Kazakh winter preserved 'Smoked Salted Horse Meat (Xun Ma Rou)', horse sausage, or massive fresh mutton blocks.
- Boil slowly in a giant pot with just water, salt, and a little onion for over
- hours until completely tender.
- (Noodles) Knead wheat flour with salt water, roll paper-thin, and cut into 'wide flat noodles' or square 'pasta flakes (Mian Pian)'.
- (Boiling Noodles - This is Life) Remove the cooked meat. Boil the noodles directly in the remaining 'premium broth infused with horse/mutton umami and fat'. The noodles absorb all the fat.
- (Plating) Pave the bottom of a giant flat plate with the cooked noodles.
- Pile the sliced horse meat or mutton like a mountain on top.
- Garnish with sliced raw onions (or briefly blanched onions) and black pepper.

[Unique Eating] Surround the massive plate. As its Kazakh equivalent name 'Beshbarmak' (Five Fingers) suggests, it is traditionally eaten by grabbing the meat and noodles together with your hands. The pungent raw onion on top perfectly resets the rich meat fat.
