The absolute king of breakfast in Henan and Xi'an's Muslim Quarter. A beef (or mutton) broth aggressively spiced with massive 'black pepper', chilies, and medicinal herbs. It is thickened with starch until it forms a viscous, jelly-like sludge. Warms you violently from the core.

Ingredients

  • Beef bone broth
  • Massive black (or white) pepper
  • Sichuan pepper
  • Potato starch
  • Dried tofu skin
  • Wood ears

Instructions

  1. [Authentic Recipe]
  2. (Base Broth) Boil beef (or mutton) bones and meat with scallion and ginger for hours to extract a premium broth.
  3. (Ingredients) Dice the boiled beef. Prepare rehydrated wood ears, daylily, julienned dried tofu, boiled peanuts, and glass noodles.
  4. (Spices: This is Life) Dump massive amounts of 'black (or white) pepper' powder, Sichuan pepper, star anise, cinnamon, and black cardamom into the broth.
  5. Season with soy and salt, add all ingredients.
  6. [Thickening Magic]: Pour in a massive amount of 'Mian Jin Shui' (wheat starch water leftover from washing dough) or potato starch slurry.
  7. Stir continuously on high heat until the entire soup becomes 'viscous and slime-like' (paste).
