- (Chilling & Paper-thin Slicing) Chill the offal completely to firm up. Slice beautifully 'paper-thin until translucent' with a cleaver and plate (often over a bed of celery).
- (Secret Hong You Sauce: This is Life) Use a base of bright red 'Homemade Chili Oil' (Hong You) created by slow-simmering premium Sichuan chilies in oil.
- Mix this with violently numbing 'Sichuan pepper powder', soy sauce, black vinegar, sugar, sesame oil, and beef broth, creating a sauce where sweetness, sourness, and extreme heat coexist.
- Drench the sliced offal heavily in this Ma La sauce.

[Trivia] Originated in 1930s Chengdu when a 'Husband and Wife' (Fu Qi) deliciously cooked and sold discarded beef offal (Waste slices = Fei Pian). Because it was so delicious, the character for 'Waste' was changed to the auspicious homophone 'Lung' (Fei). Thus named 'Husband and Wife Lung Slices' (Though lung is no longer used today).
