- Scallion(julienned whites)
- Dried tofu skin(Tofu Pi)
- Egg white
- Potato starch
- Sesame oil
Instructions
- [Authentic Recipe]
- (Shredding & Velveting) Slice lean pork (loin/tenderloin) into matchstick-thin shreds. Massage vigorously with salt, egg white, wine, and starch slurry. Coat with oil to keep it silky soft.
- Heat oil in a wok. Flash-fry (Hua Chao) the pork at 'low temp' and remove.
- (Sweet Bean Sauce Explosion) Leave a little oil. Dump in massive Beijing 'Tian Mian Jiang' (sweet bean sauce).
- [Pro Skill]: Add a touch of sugar and sesame oil to the bean sauce. Slow-fry on low until the oil and paste separate, emitting a 'roasted, charred aroma'.
- Return the pork. Toss violently on high heat until the glowing black sauce coats every single shred perfectly.
- (Plating) Line a plate with massive 'julienned raw scallion whites'. Pile the hot meat on top.
- Serve alongside squares of 'Tofu Pi' (dried tofu skin sheets).

Trivia
[Trivia] 'Jing' means Beijing. Said to have originated when commoners, unable to afford luxury 'Peking Duck', recreated its style of wrapping sweet bean sauce and scallion using cheap pork. A proud, mass-appealing dish of Beijing locals.
Eating tips & etiquette
[Unique Eating] Spread a sheet of 'Tofu Pi' with chopsticks. Place the boiling hot sweet-miso pork and raw julienned scallions on it. Roll it tightly like a spring roll, hold it by hand, and bite. The violent depth of the bean sauce is flawlessly neutralized by the scallion heat and the clean tofu skin—an invincible combo.
