Ingredients

  • Chicken(bone-in chunks)
  • Zhen Mo(Northeast wild mushrooms/or Dried shiitake)
  • Extra-thick sweet potato noodles
  • Star anise
  • Soy sauce
  • Dark soy
  • Scallion
  • Ginger

Instructions

  2. (Ingredients) DO NOT use normal shiitake. Use Northeast's special 'Zhen Mo' (Hazel mushrooms/Honey fungus), a highly aromatic dried wild mushroom (this is the soul). Rehydrate in water.
  3. Chop a young free-range chicken (Xiao Ji) bone-in, and blanch.
  4. Rehydrate 'extra-thick sweet potato glass noodles' (Hong Shu Fen Tiao) which resist turning mushy.
  5. (Stir-fry & Braise) Heat oil in a wok. Fry the chicken until golden brown.
  6. Add scallion, ginger, star anise, and dried chilies to bloom aroma.
  7. Season with soy, dark soy, and wine. Pour in the mushroom soaking liquid and water.
  8. Add the mushrooms, cover, and simmer on low for
  9. mins until premium broth extracts from the chicken bones.
  10. Finally, drop in the thick glass noodles. Reduce until the noodles 'absorb the chicken/mushroom umami broth to their limit', turning brown and meltingly soft.
