- Boil massive water, adding salt and
- tbsp of oil. The oil raises the boiling point and coats the veg, blanching it into a brilliant green.
- Drop the Choy Sum in and flash-boil for mere dozens of seconds until the stems soften slightly.
- Remove, drain, and arrange beautifully on a plate with all stems facing the same direction.
- Reduce soy, oyster sauce, rock sugar, and scallion-infused broth into a Special Sweet Soy Sauce.
- Drench the Choy Sum heavily in this sauce. Finally, violently splash a drizzle of smoking hot sesame oil over it.
