Instructions

- Cut potatoes, eggplants, and bell peppers into irregular chunks.
- Heat oil to 170°C. Deep-fry potatoes first until golden and fluffy, then remove.
- Drop eggplants into 190°C oil. Fry until they crisp slightly, then remove. Flash-fry bell peppers for a dozen seconds.
- Mix soy, salt, sugar, chicken broth, and starch slurry in a bowl.
