True to its name 'Hong San Duo' (Three Red Flowers), it uses exactly three ingredients: bright red ripe tomatoes, vibrant green chilies, and browned minced pork. Stir-fried supremely simply with soy and salt. The tomato tartness melts with the pork fat, forcing infinite consumption of white rice.

Recipe

Ingredients

  • Ripe tomatoes
  • Minced pork
  • Green chilies
  • Soy sauce
  • Salt
  • Lard

Instructions

  2. Blanch ripe tomatoes to peel skin, then dice finely.
  3. Deseed green chilies and dice to the same size.
  4. Prepare slightly fatty minced pork with a dash of salt and soy.
  5. Heat lard in a wok. Fry pork until all moisture evaporates and it becomes crumbly. Remove.
  6. In the rendered fat, flash-fry green chilies to bloom aroma.
  7. Dump in diced tomatoes. Fry on high until they bleed red juices, reducing into a natural tomato sauce.
  8. Return the fried pork.
  9. Season purely with salt and a dash of soy (ZERO water added).
  10. Toss rapidly and plate while still thick and saucy.
