- Wheat starch(or Tapioca starch)
- Peeled shrimp(or BBQ pork)

- (Batter) Mix rice flour (Indica) with wheat starch and tapioca starch in a golden ratio. Add water to make a thin white slurry. *The ratio determines the bounce.
- Prepare marinated peeled shrimp or diced Char Siu (BBQ pork).
- (Steaming/Rolling) Lightly oil a flat metal drawer in a special square steamer.
- Ladle the slurry and swirl it paper-thin across the tray.
- Scatter shrimp/pork and scallions over the liquid.
- Slide the drawer into the steamer. Blast with high steam for 1-
- mins until the sheet turns translucent and bubbles.
- Remove the tray. Use a wide scraper to push and roll the paper-thin sheet into a cylinder ('intestine' shape), sliding it directly onto a plate.
- Drench heavily in a special sweet soy sauce boiled from soy, sugar, oyster sauce, and water.
