- Maltose syrup
- Soy sauce
- Black vinegar
- Sugar

Instructions

- Marinate a bone-in whole chicken with soy, Five-Spice, and wine.
- Brush skin with maltose/vinegar syrup and hang to air-dry completely.
- Heat massive oil in a wok.
- Place chicken on a skimmer and repeatedly ladle scalding hot oil (180°C+) over the skin (this is the 'You Lin' technique).
- Continue until the skin is glass-crispy and meat is cooked.
- Cleave bone-in and plate.
- Drench in an aromatic sauce of soy, black vinegar, sugar, sesame oil, minced scallion, and ginger.
