Description

The absolute king of Taiwanese night markets (originally from Fuzhou, Fujian). A flaky pastry encases pork heavily seasoned with a violent amount of black pepper and massive green scallions. It is baked by sticking it to the inside wall of a blazing-hot cylindrical oven.

  • Green scallion(massive)
  • Black pepper(coarse)
  • All-purpose flour
  • Lard
  • Soy sauce
  • Five-Spice
  • White sesame

Instructions

  2. Knead pork with soy, sugar, Five-Spice, and a 'choking amount of coarse black pepper'.
  3. Chop massive green scallions. *Mix meat and scallions only at the moment of wrapping.
  4. Prepare a yeast water dough and a lard-flour oil dough.
  5. Encase the oil dough in the water dough; roll and fold repeatedly to create a flaky pastry.
  6. Roll flat, place meat and a mountain of scallions, and seal.
  7. Brush with water and coat in white sesame.
  8. Slap the buns directly onto the inner walls of a glowing-hot cylindrical charcoal oven.

Originally called 'Scallion Pork Bun' in Fuzhou. In Taiwan, the black pepper was violently dialed up. Because 'Fuzhou' and 'Hu Jiao' (black pepper) sound similar, the name 'Hu Jiao Bing' stuck.

Eating tips & etiquette

Served in a paper bag. Taking a huge first bite will cause scalding meat juices to squirt out. The iron rule is to nibble a tiny hole on the edge, blow to release the steam, and eat slowly.
