Description

A traditional dish representing the Dai ethnic minority in Xishuangbanna, Yunnan. A fresh green bamboo tube is stuffed with soaked glutinous rice, salted pork, and peanuts, plugged with banana leaves, and roasted directly over a charcoal fire. The fresh bamboo aroma permeates the rice.

Ingredients

  • Glutinous rice
  • Fresh green bamboo tube
  • Salted pork(La Rou)
  • Peanuts
  • Corn
  • Banana leaf

Instructions

  2. Soak glutinous rice overnight.
  3. Cut fresh aromatic bamboo into 30cm tubes, leaving one node intact as the base.
  4. Mix the rice with salted pork belly (La Rou), peanuts, and corn kernels; season with salt and soy sauce.
  5. Stuff the mixture into the bamboo tube up to 80% full (*rice expands).
  6. Pour a small amount of water into the tube.
  7. Plug the mouth tightly with a banana leaf.
  8. Lean the tube diagonally over an open charcoal fire, rotating occasionally.
  9. When the bamboo is charred black and fragrant steam hisses from the top, it is done.
  10. Cleave the bamboo in half lengthwise with a machete to serve.

Eating tips & etiquette

Extract the sticky rice log, which is wrapped in the bamboo's inner membrane, by hand and bite into it. Eating the membrane along with the rice maximizes the bamboo aroma experience.
