The absolute base seasoning of Hunan cuisine, considered 'China's spiciest'. Fresh raw red chilies are coarsely chopped (Duo), mixed with garlic, ginger, salt, and Baijiu, and lactic-fermented in crocks. Unlike fried Sichuan Doubanjiang, it ferments raw, featuring a piercing 'hot-sour' (Suan La) flavor and fresh aroma.
