The absolute star responsible for the 'Ma' (numbing) in Sichuan's 'Ma La' (numbing-hot) profile. Dried red ripe pericarps of the citrus family. Same genus as Japanese Sansho, but possesses tongue-paralyzing intense numbness and a heavy citrus aroma.
