A beautiful Pidan with transparent golden (amber) egg whites, preferred in Sichuan and Henan. Compared to traditional Songhua Pidan (black), it uses a different ratio of lime/alkali during aging, preventing it from turning black. It has almost zero 'sharp ammonia odor' or 'astringency'. Extremely mild and bouncy.
