Description
Bamboo shoots boiled (or steamed) and sun-dried until rock-hard. The prototype of JP 'Menma', but Chinese Sun Gan is unseasoned and extremely hard. Rehydrated and braised with pork or duck, it absorbs all meat umami while retaining an intense crunch.
