As the name 'Skin' suggests, dried tiny krill (baby shrimp) with shells so thin they are translucent. Unlike Xia Mi (peeled), it requires no soaking; sprinkled directly onto soups or cold salads to be eaten 'shell-on'. Rich in calcium, absolutely indispensable as a Wonton soup topping.
