Description
The most famous and globally loved premium grade among Chinese Laojiu (aged Huangjiu). Like French 'Champagne', it is protected by Geographical Indication. Only those made in 'Shaoxing City, Zhejiang', using the local 'Jian Lake water' and traditional methods are permitted to bear the name 'Shaoxing Wine'.

Everything labeled 'Shaoxing Wine' in Asian stores is authentic, clearing these strict conditions. Cheap ones sold for 'cooking' are sour and unpalatable raw; the trick for drinking is choosing at least 'San Nian Chen' (3-year aged) or older.
