Description
The sweetest 'Ultra-sweet' process among the 4 Shaoxing wine grades. Massive amounts of 'Baijiu (Zaoshao = shochu made from Huangjiu lees)' are added to the fermenting mash instead of wheat koji to forcibly stop fermentation, leaving the glutinous rice sugar to the absolute limit. Named 'Xiang Xue' (Fragrant Snow) because the white sake lees floating on the liquor look like 'snow'.

Boasts the pinnacle sweetness of Shaoxing wine; truly a 'Chinese version of Botrytized Wine (or Port Wine)'. Because fermentation is stopped with Baijiu without wheat koji, the dark color typical of Shaoxing wine is lighter, possessing a beautiful amber color.
