Description
A gourd family vegetable related to calabash, but bred for eating without bitterness. Called 'Yugao' in JP, dried into 'Kanpyo' for sushi. In China, used fresh and peeled. Fibers are softer than winter melon; heating makes it melt instantly, spreading gentle sweetness.
